
I combined my usual pork tenderloin technique with Ellie Krieger's spice blend:

Ingredients
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 1/2 lb pork tenderloin
- 1 tbsp canola oil

Directions
Preheat oven to 425º.
Combine oregano, thyme, cumin, coriander, garlic powder, salt, and pepper. Rub the seasoning blend on the tenderloin.
Heat the oil in a large skillet over medium-high heat. Add the tenderloin and brown it on all sides.
If your skillet is oven-proof, transfer it to the oven. Otherwise, place the tenderloin on a roasting pan. Cook for 15 minutes or until a meat thermometer reads 140º.
Remove from the oven and let rest for 5 minutes before slicing.

Made this last night and loved it. Never cooked pork tenderloin before and was a little worried I would ruin it. Perfect for the kids as well since it's not to spicy. Watch out for that oven safe pan though, I forgot and grabbed it off the stove bare handed and,...well you get the picture. Keep some Burn Gell around, it really works!
