
An impromptu dinner meant cleaning out the refrigerator and pantry. I had sausage, kale, potatoes, and homemade stock. A quick recipe search led me to The Candid Appetite's simple dish. I'll be doing this a again.
Ingredients
- 1 lb sausage, casings removed
- 2 tbsp butter
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bundle kale, chopped
- 2 russet potatoes, diced potatoes (skin optional)
- 8 cups chicken stock
- 1/2 cup heavy cream (optional)
- salt and pepper to taste
Directions
Heat a large soup pot over medium heat and cook the sausage, breaking it up as it cooks. Once it has lost its pink and taken on some color, remove and set aside.
In the same pot, heat the butter. Cook the onions and garlic, scraping the bottom of the pot to lift the tasty brown bits. Once the onions start to caramelize, add the kale.
As soon as the kale wilts, add the potatoes, sausage, and stock. Bring to a boil, and then simmer until the potatoes are tender.
Add salt and pepper to taste.
