Fast. Simple. Delicious.

Ingredients

  • 2 boneless rib-eye steaks
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 1 tbsp vegetable oil
  • 2 cloves cloves, minced
  • 1/2 cup dry red wine
  • 1 tbsp soy sauce
  • 1 tbsp butter
  • kosher salt and pepper to taste

Directions

Sprinkle steaks with salt and pepper on both sides.

Heat oil in a heavy skillet over high heat until it shimmers. Sauté steaks 3-5 minutes on each side for medium-rare: 3 minutes for 1/2" steaks, 4 minutes for thicker 3/4", and 5 minutes for 1" steaks.

Transfer to a serving platter and let sit.

Turn the heat down to medium. Add the garlic to the skillet and sauté briefly. Add the wine and soy sauce, stirring and scraping up any bits stuck to the bottom of the skillet. Once reduced by half, add in any meat juices from the platter. Reduce by half again. Remove from heat and whisk in the butter.

Pour the sauce over the steaks and serve immediately.
