These were moist and delicious. I recommend rum-spiked cream cheese frosting.

Note: That red food coloring can stain so be careful!

Ingredients

  • 8 tbsp butter, at room temperature
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 tsp kosher salt
  • 1 tsp distilled white vinegar
  • 1 tsp vanilla extract
  • 3 tbsp red food coloring
  • 1/4 cup Dutch processed cocoa powder
  • 2 cups cake flour
  • 1 tsp baking soda
  • red food coloring
24 cupcakes

Directions

Preheat oven to 350ยบ.

Cream the butter and sugar until fluffy. Add the eggs, buttermilk, oil, salt, vinegar, vanilla, and red food coloring until well-incorporated.

Add the cocoa powder, flour, and baking soda. Mix well.

Add a 1/4 cup of batter into each lined well of 2 cupcake pans.

Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

Cool before adding frosting.
