
This is pretty delicious. The peanut butter is light, like what you'd find in an Abba Zabba.
Ingredients
- 2 tbsp canola oil
- 2/3 cup popcorn
- 1/2 cup sugar
- 1/2 cup honey
- 1/2 cup peanut butter
- 1/2 tsp kosher salt
- 1/2 cup roasted and salted nuts (optional)
Directions
Heat oil and 3 kernels in a heavy 5 quart pot with a cover over medium-high heat.
When a kernel pops, add the rest of the kernels. Cover. Shake to distribute and return to heat. No need to keep shaking. Just let it sit there. Remove from heat when the popping subsides (about 2-3 seconds between pops), and transfer to a large mixing bowl. Sift out the kernels.
Meanwhile, heat the sugar and honey in a small saucepan over medium heat until it's fully combined and bubbling to the point that you can't see the liquid. Remove from heat. Stir in the peanut butter and salt.
Toss the popcorn with the peanut butter mixture and nuts.
Spread onto a lined baking sheet to cool.
