oatmeal raisin cookies

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cup dark brown sugar
  • 1 egg
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1 1/2 cups rolled oats
  • 1/2 cup raisins
2-3 dozen

Directions

Preheat oven to 350°.

Cream together the butter, brown sugar, and egg in a standing mixer fitted with a paddle.

In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Add to the standing mixer.

Mix in the oats and raisins.

Chill in the refrigerator for an hour if you seek thicker cookies. Otherwise, bake immediately.

Place tablespoon-size scoops on a parchment-lined cookie sheet. Bake for about 10 minutes.
