
It's kind of crazy to cook a roast for only 1 hour, but it's a legit technique assuming you'll slice the thing super thin against the grain. This particular recipe delivered great flavor in a relatively short amount of time. And don't be scared of the mustard powder or soy sauce. The roast will have a meaty flavor that goes well with just about anything.
Ingredients
- 2 tbsp dry mustard powder
- 2 tbsp soy sauce
- 1 lemon, juiced
- 1/2 tsp kosher salt
- 2-3 lb beef rib roast
- 2 tbsp canola oil
Directions
Preheat oven to 375º.
Whisk together the mustard powder, soy sauce, lemon juice, and salt until it forms a paste. Spread it all over the rib roast. Set aside.
Heat the canola oil in a large skillet over medium-high heat. Add the roast and brown it on all sides.
If your skillet is oven-proof, then transfer it to the oven. Otherwise, place the roast on a roasting pan. Cook for 1 hour or until a meat thermometer reads 140º.
Remove from the oven and let rest for 5 minutes before slicing.
