I guess it's the yogurt that makes this bread so soft and tasty. This recipe is simple and delicious, and you can imagine adding things to the dough to make it more savory and interesting, like garlic and potatoes. Hmmm...

Ingredients

  • 1/2 cup warm water
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 2 cups all-purpose flour
  • 1 tsp kosher salt
  • 2 tbsp ghee (or very soft butter)
  • 1/4 cup yogurt
  • Plus you'll need ghee to grease your ball of dough and to brush each piece afterward. Also, cilantro makes a nice garnish.

Directions

In the bowl of a standing mixer fitted with a paddle, add water, yeast, and sugar. Let stand for 10 minutes.

Add flour, salt, ghee, and yogurt. Mix well until dough is soft and supple. Remove from bowl and knead for 5 minutes on a floured work surface. Form a ball, rub with ghee, and place in a deep bowl. (I use a 2 quart pyrex.) Cover with a damp cloth and let rise for 2-3 hours. (The oven makes a fine spot for draft-free rising.)

Knead for 5 minutes. If you want to make garlic or some other flavored naan, knead it into the dough now.

Divide dough into 6 balls. Working one at a time, flatten the ball and roll it out. Then, using your hands, gently stretch the dough.

Heat a skillet on medium-high heat. Place naan in the skillet and cook until bubbles appear and the bottom starts to char. Flip and repeat for the other side.

Remove from heat. Immediately brush with ghee and sprinkle with chopped cilantro.
