
Here's an easy soup that everyone will love. It has meatballs!
Ingredients
- 6 cups chicken or vegetable broth
- 3 carrots, peeled and diced
- 3 stalks celery, diced
- 1 leek, white part thinly sliced
- 1 egg
- 1 tsp ground cumin
- 1 tsp fresh oregano, chopped
- 1/2 tsp kosher salt
- 1/4 tsp ground pepper
- 1 lb ground turkey
- oregano for garnish

Directions
In a large pot, combine broth, carrots, celery, and leek. Bring to a boil and simmer until the vegetables are al dente.
Meanwhile, beat the egg with the cumin, oregano, salt, and pepper. Stir in the turkey until well-combined. Shape the meat into 2 tablespoon balls.
Lower meat into the broth. Cook for 10-15 minutes.
Stir warm.
