
We had the luxury of being in Kauai and hitting up the farmers market yesterday, where I picked up some local produce: sunflower sprouts, sprouted garbanzo beans, radishes, a grapefruit, an avocado, and a lemon. For today's beach trip, I threw them together with a little olive oil and salt. Everything was fantastic, but I was especially taken by the garbanzo beans, which I've never eaten in a sprouted state. They were tender, with a nice nutty flavor. Yum!
Ingredients
- 2 cups sunflower sprouts
- 1 cup sprouted garbanzo beans
- 2 radishes, sliced
- 1 avocado, peeled and chopped
- 1 grapefruit, peeled and chopped
- 2 tbsp olive oil
- 1/2 lemon, juiced
- 1/4 tsp salt
