kahlua marshmallows

Now that I have homemade kahlua, I needed to find uses for it. The idea for marshmallows came after seeing alchemisty's tasty-looking marshmallows:

I bused out my own tried-and-true recipe for marshmallows and gave it a try, switching out the first 1/3 cup of water for kahlua. Not bad but could use perhaps even more of a kahlua flavor.

Ingredients

  • 2 tbsp of gelatin (just over 2 envelopes)
  • 1/3 cup homemade kahlua*
  • 1/3 cup water
  • 1 1/3 cup granulated sugar
  • 1/3 cup light corn syrup
  • 1/2 tsp kosher salt
  • spray vegetable oil
  • 1/2 cup powdered sugar
  • 2 egg whites

36 or so cubes

Directions

Combine gelatin and kahlua in the bowl of a standing mixer fitted with a whisk. Let sit.

In a saucepan, combine water, sugar, corn syrup, and salt. Cook on medium heat, stirring to dissolve the sugar. Once dissolved, let cook until the mixture reaches 240ยบ.

Meanwhile, spray a 9" square baking pan with oil. Coat generously with sifted powdered sugar, reserving some for dusting the top. Set aside.

When the sugar mixture has reached the desired temperature, add it to the standing mixer. Starting on slow and working up to high, whisk together the ingredients.

Meanwhile, beat egg whites until they hold stiff peaks.

When the mixture in the standing mixer has about tripled in size (about 8 minutes), add stiffened egg whites and let whisk just until combined.

Pour mixture into prepared baking pan. Dust with powdered sugar. Let set for a few hours before cutting into bite-size pieces.
