
Jodi's cookies are delicious. And there's no wheat flour or eggs! Since I am lazier than Jodi, I modified the recipe for 1 lb almond meal, which is what Trader Joe's sells. That way, you just dump a bag of almond meal in your bowl and go!
Ingredients
- 1 lb almond meal (about 4 cups)
- 1/2 tsp kosher salt
- 1/2 tsp baking powder
- 1/2 cup butter, softened
- 1/2 cup maple syrup
- 1 tbsp vanilla
- 1 cup mini chocolate chips
3 dozen 1" cookies
Directions
Preheat the oven to 350ยบ.
Combine the almond meal, salt, and baking powder. Then add in the butter, maple syrup and vanilla. Fold in the chocolate chips and stir until well-incorporated.
Drop about 2 teaspoons per cookie on a baking sheet and flatten into disks. Bake for 15 minutes.
Cool before serving.
