This meaty and fatty faux rib is an inexpensive way to add porky flavor to any meal.
- 3 lbs country-style pork ribs
- 2 tsp kosher salt
- 2 tsp chili powder
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp black pepper
Mix the spices and rub it all over the meat. Let it marinate for 3 hours or so.
Bring the meat to room temperature before grilling.
Grill at high heat (about 450º) until cook at the center. You'll have to wing it or use a thermometer because this cut is very uneven.
Let rest 5-10 minutes before slicing.
