The NY Times created a recipe based on a pizza from Roberta's in Brooklyn. This pizza is easy and delicious! Can't ask for more.
- 1 12" pizza dough, stretched and ready to go
- 3 oz fresh mozzarella
- 1/2 oz parmesan, finely grated
- 2 handfuls baby arugula
- 1/2 lemon, juiced
- extra-virgin olive oil
- kosher salt
Place a pizza stone on the middle rack of your oven if you're using one.
Preheat oven to 500º.
Scatter pieces of mozzarella over the dough. Drizzle lightly with olive oil, and then scatter the parmesan on top.
Transfer the pizza to the oven and bake until the crust is golden brown, about 10-15 minutes.
Meanwhile, toss the arugula with a splash of olive oil, the lemon juice, and a pinch of salt.
When the pizza is done, topped with greens and serve.
