green onion spaghetti

green onion spaghetti by joanie

This recipe is basically spaghetti tossed in green onion oil. It's light and delicious, not so much as an entre (unless you're me--then it's breakfast) but more so as a complement to something meatier like salmon, mushrooms, or fatty pork.

Ingredients

  • 8 oz spaghetti
  • 2 tbsp canola oil
  • 7 green onions, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp ginger, grated
  • 1 tbsp sesame oil
  • 1/4 tsp kosher salt
  • fresh ground papper
  • cilantro
2 servings or 4 sides

Directions

Heat a large pot of salted water. Cook pasta al dente according to the package.

Meanwhile, heat canola oil in a pan over medium heat. Add onions, garlic, and ginger. Cook until soft and fragrant. Remove from heat and stir in the sesame oil and salt.

Drain pasta and toss with green onions. Serve immediately with freshly cracked pepper and a little cilantro garnish.
