
This is a quick, beautiful, and spectacular salad that has more arugula than the photo demonstrates. I held back on this particular occasion knowing my kids wouldn't eat the arugula.
Ingredients
- 1 grapefruit
- 1 thin slice of red onion
- 1/2 lemon
- 1 tbsp olive oil
- pinch salt
- pinch pepper
- 2 handfuls arugula leaves
- 1 avocado

Directions
Peel and thinly slice the grapefruit against the grain. Place in a small bowl. Quarter the onion slice and add to the bowl. Add juice from half a lemon. Add olive oil. Season with salt and pepper. Toss.
Place arugula on plate. Slice avocado and add to plate. Top with grapefruit segments. Drizzle with vinaigrette left in the bowl.
