
This is a pretty delicious lunch that's easy to throw together, provided you have gnocchi on hand. I used ricotta gnocchi in the photo (recipe below), but potato gnocchi will do.

Ingredients
- 4 servings of gnocchi, boiled and ready to go
- 1/2 cup butter
- 3 cloves garlic, minced
- 2 shallots, sliced
- 8 oz mushrooms, sliced
- 12 springs thyme, roughly chopped
- 1/4 cup vermouth
- salt and pepper to taste
- lemon zest and grated parmesan for garnish

Directions
Melt butter in a large pan over medium heat. Add garlic, shallots, mushrooms, and thyme. When softened, add gnocchi and vermouth.
As the sauce thickens and the gnocchi takes on some color, remove from heat, plate, garnish, and serve.
