ginger scallion noodles


  • 1 5" piece ginger, peeled and grated
  • 4 cloves garlic cloves, minced
  • 1 bunch green onions, thinly sliced
  • 1/4 cup vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp black pepper
  • 1 tsp sesame oil
  • 1/2 tsp sugar
  • kosher salt
  • 1 lb ramen noodles
  • toasted sesame seeds
  • cucumbers, julienned
  • chili oil


Combine ginger, garlic, and green onions in a large bowl.

Heat oil in a small saucepan over high heat. Pour hot oil over the green onion mixture. Let sit for 5 minutes.

Add soy sauce, rice vinegar, pepper, sesame oil, and sugar. Let sit for 15 minutes. Taste and adjust as needed.

Meanwhile, cook noodles according to the package. Drain and toss with the sauce.

Top with sesame seeds and julienned cucumbers. Finish with a little chili oil.
