fresh veggie dressing (or dip or spread) by joanie

This dressing was simply spectacular. It tastes kind of like a cucumber gazpacho. Each ingredient is decipherable, and yet it all holds together. It's super tasty with a baguette.

Ingredients

  • 1/2 English (or 2 Persian) cucumber
  • 2 green onions
  • 1/2 cup (about 1/2 oz) mint leaves
  • 2 cloves garlic
  • 1 lemon
  • 1 avocado
  • 2 tbsp olive oil
  • 1 tsp kosher salt
1 cup

Directions

Roughly chop the cucumber and green onions. Add to food processor, along with mint leaves. Process until the contents become smooth. Press the garlic and juice the lemon into the mixture. Pit and peel the avocado, and add the flesh to the food processor. Add olive oil and salt. Process until smooth.
