Flour just gets in the way of the chocolate so get rid of it and make a tasty cake that's quick and easy. Just 5 ingredients! So by all means, use good chocolate. For the cocoa powder, use Dutch process or extra brute. For the chocolate, use something you'd eat straight up. (I like Ghirardelli, which conveniently comes in 4 oz bars.)

Ingredients

  • 1/2 cup butter
  • 4 oz bittersweet chocolate, chopped
  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup Dutch process cocoa powder
8" round

Directions

Preheat oven to 375°.

Using a microwave, heat butter and chocolate for 30 second increments, stirring in-between to fully melt the chocolate. (Should only take about 1 minute total.)

In a large bowl, combine the eggs and sugar. Sift the cocoa powder into the egg mixture and mix. Add the melted chocolate and use a spatula to stir just until combined.

Line the bottom of a 8" round baking pan with a round of wax paper. Lightly butter the sides. (What's left on your butter wrapper will likely be enough to get the job done.)

Pour batter into the baking pan and bake on the middle rack for 20 minutes or until top has formed a thin crust.

Cool before serving.
