This was great, but next time I will add mushrooms. Yum.

Ingredients

  • 1 thick (or 2 thin) slices of bacon, thinly sliced
  • 1 green onion, sliced
  • 1 cup semi-pearled farro
  • 1 garlic, finely minced
  • 1/4 cup dry white wine
  • 1/4 tsp kosher salt
  • 3 cups chicken broth

Directions

In a large skillet over medium-high heat, cook the bacon until crispy. Remove and set aside.

Lower the heat to medium. In the same skillet, cook the green onion (reserving some for garnish) in the bacon fat until fragrant (about 1 minute).

Add the farro and cook until toasted (about 3 minutes), stirring often. Add the garlic, wine, and salt. Cook until the liquid has mostly evaporated.

Add the chicken broth. Cook the farro until tender (about 30 minutes). If the mixture gets dry, add water as needed.

Serve garnished with the cooked bacon and reserved green onions. Add some shaved parmesan if you have it.
