You just throw all the ingredients in a blender, and salsa appears!

The color of your tomatoes will dictate the salsa. Frankly, the redder the cherry tomatoes, the more appetizing the salsa. I've used a mix of yellow, orange, and purple tomatoes, and the salsa looks...well, let's just say it tastes better than it looks. Also, the blender pulses a lot of air in the salsa, making it a little foamy and light-colored. Once it settles and cools in the fridge, it will look just right.

Ingredients

  • 4 fresno peppers
  • 1 lime
  • 1⁄2 purple onion
  • 1⁄2 cup chopped cilantro leaves
  • 24 cherry tomatoes (about 1/2 lb.)
  • 1 tsp kosher salt
2 cups

Directions

Remove the stems and seeds of the peppers. Put them in the blender along with the juice of one lime. Add the rest of the ingredients and puree.

Refrigerate before serving.
