easy popcorn

I can't believe this is my second popcorn recipe. You'd think I was some kind of popcorn freak, which I'm not. I mean, I like popcorn occasionally, but I stumbled across this recipe and it was so dead simple that I had to try it. And it worked! Every kernel popped, and nothing burned.

What's more, I got to use ghee, which is basically a natural butter oil with a higher smoke point that regular butter. I used kerrygold to make it so it's the real deal.

I know this is kind of a duh recipe, but frankly it blew my mind. You basically make it in a pot, but there's no shaking. My dad was crazy about popcorn and made it in a pot, but he would shake it constantly. There was something about the pot scraping back and forth against the burner that was akin to nails on a chalkboard. I hated doing it! So I never did.

But now I see that you don't need to shake it at all! It's easy. Too easy. This may now actually make me a popcorn freak.

Ingredients

  • 2 tbsp vegetable oil or ghee
  • 2/3 cup popcorn
  • 1 tsp kosher salt
8 quarts

Directions

Heat oil/ghee and 3 kernels in a heavy 5 quart pot with a cover over medium-high heat.

When a kernel pops, add the rest of the kernels. Cover. Shake to distribute and return to heat. No need to keep shaking. Just let it sit there. Remove from heat when the popping subsides (about 2-3 seconds between pops), and transfer to a large serving bowl.

Toss with salt and serve.
