crispy kale and coconut farro

This is a tasty if unusual dish. I had my doubts: kale, coconut, and soy sauce seemed like a weird mix. But it works.


  • 1 cup dry farro
  • 1/4 cup extra virgin olive oil
  • 2 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 bunch kale, stems removed
  • 1 cup unsweetened coconut flakes

Preheat oven to 350ยบ.

Heat a large pot of salted water. Add farro and cook according to the package (about 10 mintues).

Meanwhile, in a large bowl whisk together olive oil, soy sauce, and sesame oil.

Wash, dry, and roughly chop the kale. Add it to the large bowl along with the coconut flakes. Mix well.

Spread kale mixture across 2 large baking sheets. Bake on the middle and middle-high racks for 10 minutes. Switch the sheets and bake another 10 minutes.

Plate the farro and top with the kale mixture. Serve immediately.
