I loved the story on Simply Recipes about Bob's Big Boy. It was my childhood favorite, too.

These rings are hearty yet delicate. The outer shell crumbles easily. It's not a deterrent, really; it merely slows you down.

Ingredients

  • 1 yellow onion
  • 1 cup buttermilk
  • 1 cup flour
  • 1/2 cup cornmeal

Directions

Heat 1/2" canola oil in a 5 quart pot over medium heat.

Slice the onion into 1/2 rings and submerge in buttermilk. Set aside.

Whisk together the flour, cornmeal, salt, and pepper.

When the oil starts to shimmer, work in batches to dredge the milky rings in flour and fry, turning them over as they brown. Remove and drain on paper towels before serving.

Garnish with parsley to make yourself feel better about eating deep fried onions.
