
These cookies have the flavor of those chocolate wafer cookies that came in a box. I loved those so much, but you can't buy them anymore. These cookies also taste a bit like oreos. They're good.
Ingredients
- 1 stick butter, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
- 1 cup all-purpose flour
- 1/2 cup Dutch process cocoa powder
- 3 tbsp canola oil
Directions
In the bowl of a standing mixer fitted with a paddle, beat butter, sugar, vanilla extract, and salt until smooth.
Add in the flour and cocoa powder until just combined. Drizzle in the oil until the dough comes together in a ball.
Lay out a sheet of wax paper. Place the dough on top. Roll the ball up in the wax paper, and then roll it back and forth until the dough forms a log about 1 1/2" across. Refrigerate the wrapped dough for 45 minutes.
Preheat oven to 350ยบ.
Remove the cookie dough from the refrigerator. Slice into 1/8" rounds, and place on a parchment-lined cookie sheet leaving room for the cookies to spread. Bake one sheet at a time for about 12 minutes or until the edge just begins to turn golden. (They'll finish cooking as they cool.)
