
Yum. These are pretty perfect. They're very chocolatey. If you've ever made chocolate cookies, then you know the key is adding chips. I like mixing semisweet and milk chocolate chips since semisweet adds richness while the milk gives a hint of caramel.
Ingredients
- 8 oz semisweet chocolate, chopped
- 4 tbsp butter
- 2 eggs
- 3/4 cup packed brown sugar
- 1 tsp vanilla extract
- 1 tsp kosher salt
- 3/4 cup all-purpose flour
- 1/2 tsp baking powder
- 2 cups chocolate chips
Directions
Preheat oven to 350ยบ.
Using a microwave, warm the chocolate and butter in 20 second intervals, whisking in-between, until it just starts to melt on the edges (about 60 seconds total). Remove and whisk to finish melting the chocolate.
In the bowl of a standing mixer fitted with a paddle, beat the eggs, sugar, vanilla, and salt. Mix in the chocolate. Then sift in the flour and baking powder, and stir until just combined. Fold in the chocolate chips.
Drop 2-teaspoon-sized spoonfuls onto a parchment-lined cookie sheet. Bake one sheet at a time for about 8 minutes or until the edge appear set. (They'll finish cooking as they cool.)
