chili lime popcorn

Baking the popcorn produces a nice crispness...even a sweetness that makes you think there's a little sugar in there.

Ingredients

  • 1/4 cup butter, melted
  • 1 lime, zested and juiced
  • 2 tsp kosher salt
  • 1 tsp tequila (optional)
  • 1 tsp ground cumin
  • 1/2 tsp ground cayenne
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil or ghee
  • 2/3 cup popcorn

Directions

Preheat oven to 300ยบ.

Whisk together butter, lime juice, lime zest, salt, tequila, cumin, cayenne, and pepper. Set aside.

When a kernel pops, add the rest of the kernels. Cover. Shake to distribute and return to heat. No need to keep shaking. Just let it sit there. Remove from heat when the popping subsides (about 2-3 seconds between pops), and transfer to a large mixing bowl.

Toss popcorn with the butter-spice mixture. Transfer to a lined baking sheet and bake for 10 minutes.

Let cool slightly before serving.
