celery salt

Seems like you can make celery salt from celery seeds, celery leaves, and celery root (celeriac). This version uses celery leaves, which you probably discard anyway. Dried and combined with salt, those leaves provide a nice accent to many dishes. Start using your leaves!

Ingredients

  • celery ends
  • sea salt flakes

Directions

Wash celery. Remove leaves from stems. Lay leaves out on a towel to air dry (about 1 hour). Leaves should not overlap.

Preheat oven to 200ยบ.

Transfer leaves to cookie sheets. Once again, take care not to let the leaves overlap.

Turn off the oven. Place cookie sheets inside the oven. The leaves will dry using the residual heat. Leave them in there for half an hour.

The leaves should be crisp while having retained most of their color. Transfer them to a large cutting board and chop them into small pieces.

Transfer to jar and add roughly the same amount of sea salt. Stir to combine.
