What? They don't look appetizing in their small, shriveled state? Whatever. I'm still perfecting this recipe.

Here's what I've learned so far: beet chips are very easy and super frustrating to make.

I determined early on that you actually don't need oil. (And if you use oil, I imagine you should at least use a wire rack to keep the little guys from sitting in oil.) The original recipe, which I adapted from Tara, seemed to have way too much oil. Other recipes I found called for less. I went cold turkey. And guess what? Turns out beets don't need oil. At least, they don't to me. So that's my first modification.

The second is the temperature. 400º is too high. Beets are basically too watery to crisp. You need to dry them out before you can crisp and brown them, which means you need a lower temp. And, of course, you need to cut them super thin.

Third, I believe you should process them in waves. Basically, they don't all seem to finish at the same rate. It's important to continually remove the done ones. This method provides for that.

Ingredients

  • 3 beets
  • sea salt to taste
  • pepper to taste
1 small bowl

Directions

Preheat oven to 300º.

Peel the beets. You don't need to be perfect; just be sure to remove all that unsightly hair!

Slice the beets very thin. Now's the time to use a mandoline. Don't wing it. Get the mandoline out.

Spread the slices in a single layer on a cookie sheet. Lightly sprinkle with salt and pepper. Set aside slices that don't fit onto the tray. Their time will come later.

Bake at 15 minute intervals. After each interval, remove the crispy beets, flip the rest, and arrange them to one side. Fill the rest of the tray with uncooked beets, and lightly salt/pepper the new additions before returning the tray to the oven.

Once all beets are done, let them cool before serving.

    I tried this last night and it was a hit! All 3 kids normally hate beets (to be precise, the emotion ranges from dislike to detest), yet they liked the beet chips! It did take a while to finish cooking but it was worth it.
