Here's a great way to recycle last night's roasted chicken! And it's easy to dress this up. Think fresh herbs, grapes, cornichons...whatever. It's all good.

Ingredients

  • 2 cups cooked chicken, finely diced
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 tsp dijon mustard
  • 1 stalk celery, finely diced
  • 1 thin slice red onion, finely diced
  • 1/2 lemon, juiced
  • salt and pepper to taste
2 servings

Directions

Stir together ingredients until well-combined. Add salt and pepper to taste.

Serve as a sandwich or scooped on a salad.
