
As the Kitchn promised, this is a great way to use that bit of buttermilk you have in the fridge. And the flavor is great. Not too sweet. It's kind of like a biscuit meets a muffin. Think of this recipe as a canvas for delicious and crazy variations involving fruit, nuts, cheese, herbs, jalapenos, etc.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 1 cup buttermilk
- 1 egg
- 1/4 cup butter, olive oil, or vegetable oil
Directions
Preheat oven to 350ยบ.
Whisk together the flour, sugar, baking powder, baking soda, and salt.
Melt the butter, and then whisk it with the buttermilk and egg.
Combine the dry and wet ingredients, gently folding the mixture to prevent overworking the batter.
Transfer the batter to a greased or sprayed 9x5" loaf pan. Be sure to spread the mixture as best you can. (It's kind of shaggy and dry for a batter.)
Bake for 45 minutes. Let cool for another 15 before cutting.
