
It never occurred to me to make banana cookies, but after reading Gotham Gal's post, I was compelled to make a banana cookie that wasn't cakey:

I adapted my tried and true chocolate chip cookie recipe with tweaks inspired by Alton Brown's Bananas Foster recipe. Hence the rum and spices.

These cookies had a spongy quality, but they were delicious. You know they're good when you can't stop eating the batter.
Ingredients
- 1 cup butter, softened (not melted)
- 1 cup dark brown sugar, packed
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 3 ripe bananas
- 1/4 cup rum (optional)
- 1/4 tsp all spice
- 1/4 tsp nutmeg
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp kosher salt
Directions
Preheat oven to 350ยบ.
In the bowl of a standing mixer fitted with a paddle, beat butter, brown sugar, granulated sugar, and vanilla extract until smooth. Add eggs one at a time. Add the bananas, rum, and spices. Mix well.
Sift together flour, baking soda, and salt. Add to mixer until combined.
Spoon tablespoon-sized balls onto a parchment-lined cookie sheet. Bake one sheet at a time for about 11 minutes or until the edge just begins to turn golden. (They'll finish cooking as they cool.)
