
Here's a way to make a lot of hash browns without laboring over the stovetop. They may not be as moist as fried hash browns, but they'll be crispier, which I love.
Ingredients
- 2 large russet potatoes
- 2 tbsp canola oil
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper

Directions
Preheat oven to 400ยบ.
Peel and grate the potatoes. Squeeze out the water and toss with oil.
Spread out the potatoes on a lightly oiled baking sheet. (Crowd the center a little less than the edges since it's the last to brown.) Sprinkle with salt and pepper.
Bake on the middle rack for 40 minutes or until golden brown.
Serve warm.
