bacon cream sauce

Ingredients

  • 4 tbsp butter
  • 2 slices thick-cut bacon, chopped
  • 1 shallot, minced
  • 1/4 cup all-purpose flour
  • 1 cup chicken stock
  • 1 cup heavy cream
  • salt and pepper to taste
about 2 cups

Directions

Melt the butter in a saucepan over medium heat. Add the bacon and shallots, and cook just until the bacon is rendered.

Lower the heat to low. Add the flour. Stir often as it browns (about 5 minutes).

Add the stock and cream. Cook until it reduces to a thick gravy-like sauce (about 10 minutes). Add salt and pepper to taste.

Remove from heat and use immediately.
