Ingredients
- 4 slices bacon
- 1/2 cup whole milk
- 1 egg
- 2 tbsp butter, melted and cooled
- 1/2 tsp kosher salt
- 1 tbsp sugar
- 3/4 cup all-purpose flour
- 3/4 tsp baking soda
- 1/2 cup cheddar cheese, shredded
4 waffles
Directions
Cook the bacon and let drain on a paper towel. Set aside.
Heat the waffle iron.
Whisk together the milk, egg, butter, salt, and sugar. Sift in the flour and baking soda. Stir just to combine, taking care not to overwork the batter. Fold in the cheese.
Ladle the batter onto the waffle iron. Lay the bacon on top and let 'er cook.
Serve warm with syrup.
