When I first saw this, I knew I had to make it. I mean, you fry an egg inside of an avocado! Jerry James Stone has a nice video showing it step-by-step.

I fashioned only 2 slices per avocado and used all the leftover flesh as a nice little side to my egg. I sprinkled red onion on top. A little balsamic might have been nice.

Ingredients

  • 1 tsp extra virgin olive oil
  • 1 avocado
  • 2 eggs
  • salt & pepper to taste

Directions

Heat oil in a saute pan over medium heat.

Meanwhile, cut the avocado in half and remove the seed. For each half, cut off the rounded back so that you have a 1/2" slice of avocado (flat on both sides) with the skin still intact around the edge. Dig out the pit so that the hole in the center goes clear through.

Place both slices in the hot oil. Crack an egg into the center of each and let cook until the edges turn white (about 5 minutes). Flip and cook until the edges begin to brown.

Serve warm with a little salt and pepper.
