It seems there are two kinds of almond milk: almond milk (no modifier) and *raw* almond milk. The difference is whether you boil the liquid before straining. If you're drinking it right away, or at least in the next few days, there's little reason to bother with boiling. In my mind, that's just one more step, and I don't like unnecessary steps.
Ingredients
- 1 cup almonds
- 3 cups water
2 servings
Directions
Add ingredients to a blender. If you have a Vitamix, blend on high for 2 minutes. Otherwise, blend for a good 5 minutes or so.
Strain through a coffee filter. (I place a basket filter in a sieve and wait awhile.)
Refrigerate or enjoy immediately.

I've been working on my straining method. I hate the messy cheesecloth. So far, I like the ease of a coffee filter, but it takes a good while.
