I grew up with succotash. Nowadays you'd be hard pressed to find lima beans. I like soy beans better anyway. Add bacon, and there's no turning back.

Ingredients

  • 1 lb soy beans, fresh or frozen
  • 3 slices thick bacon, thinly sliced
  • 3 carrots, peeled and chopped
  • 1 yellow onion, chopped
  • 1/2 cabbage, chopped
  • 3 cloves garlic, minced
  • 4 ears corns, kernels only
  • 4 handfuls of arugula
  • Salt to taste

Directions

If your soy beans are frozen, then boil them for 4 minutes in salted water. Drain, and set aside.

Cook bacon in a large deep skillet over medium heat. When the ends start to brown and crisp, add the carrots and onions. When the carrots and onion take on color, add the cabbage and garlic. Once the cabbage is tender, add the corn kernels and soy beans. Cook until the corn takes on some color.

Salt to taste.

Serve immediately over a bed of arugula.
