mint chocolate chip ice cream

mint chocolate chip ice cream by joanie

This recipe is nice. It's not that sweet. I use less sugar than the original recipe calls for. You may want to add more sugar if you like it sweet. I find that I appreciate the milk and cream when the sugar is reduced.

NOTE: This recipe uses raw eggs. For a tempered version, see the Ice Cream Geek:

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 2 cups heavy whipping cream
  • 1 cup whole milk
  • 2 tsp peppermint extract
  • 4 oz your favorite chocolate, chopped
1 quart

Directions

Whisk the eggs and sugar until they turn light in color. Then whisk in the cream, milk, and peppermint extract.

Transfer the mixture to an ice cream maker and churn according to your machine. Right before the ice cream is done churning, add in the chocolate.

Transfer to freezer-safe containers and freeze for at least 1 hour before serving.
