I've always loved Coco Lopez cream of coconut...so much so that Coco Lopez is my alternate drag name. (Juanita Chihuahua is my primary name.) It's such a sweet indulgence made of so many unpronounceable things, even if the label proudly makes the simple claim to be "real." Sadly, this is why I've embarked on a personal project to find an alternative that's less sweet and made with more actually real ingredients and less esoteric ones. However, before I can begin, I must first start with the mother of all piña colada recipes, Coco Lopez's recipe for "The Authentic Piña Colada." Here it is, with just a splash more rum.

According to Wikipedia (which is NEVER wrong), piña coladas were developed in Puerto Rico in the 1950's alongside the invention of Coco Lopez cream of coconut. It is the official drink of Puerto Rico.

Ingredients

  • 2 oz Coco Lopez cream of coconut
  • 2 oz pineapple juice
  • 2 oz rum
  • 1 cup ice
1 cup

Directions

In a blender, combine Coco Lopez, pineapple juice, rum, and ice. Blend until frothy. Pour into a glass and garnish however you like. Enjoy immediately.
