pineapple mint syrup

I made this syrup in order to enjoy some pineapple mint soda, which is simply this syrup mixed with sparkling water at a 1:2 ratio. Add rum for a surprisingly creamy finish!

Ingredients

  • 1 pineapple
  • 2 cups sugar
  • 1 cup brown sugar
  • 1 bunch fresh mint
  • 2 limes
almost 3 cups

Directions

Remove the skin and cut the pineapple into smallish chunks. Combine with both sugars in a large, covered pot and let macerate for 12-24 hours, stirring occasionally to help the sugar dissolve. Be mindful that this may attract bugs...

When the fruit has macerated, move the pot to the stove. Throw in the mint, cover, and bring to a boil over high heat. Then lower the heat to medium and let simmer for 5 minutes. Turn off the heat but leave the pot covered, letting everything steep for 1 hour.

Strain the liquid through a fine sieve. Add the juice of both limes. Let cool and use immediately, or store in the refrigerator.
