I pretty much like cabbage any which way, and this way is as good as any! Grilling gives cabbage a richer flavor, and the dressing is a nice light Thai-inspired thing (another way to say "it has fish sauce") that would make a pleasant all-around dressing.

Ingredients

  • 3 limes
  • 2 cloves garlic, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne
  • 1 tsp fish sauce
  • 1/4 cup + 1 tbsp extra virgin olive oil
  • 1 head cabbage
  • 1/4 cup cilantro leaves
  • 1 tbsp roasted sesame seeds (optional)

Directions

Zest the limes and set aside.

Using a food processor or immersion blender, combine garlic, salt, cayenne, fish sauce, 1/4 cup olive oil, and juice from 3 limes.

Heat the grill. Remove the cabbages outer leaves and cut into 8 wedges leaving the stalk intact. Rub with 1 tablespoon olive oil, and sprinkle with salt and pepper. Grill until the edges begin to blacken and the cabbage softens. Flip. Transfer to a serving plate when the cabbage begins to char and wilt.

Drizzle with dressing. Top with cilantro and zest to taste. Sprinkle with roasted sesame seeds if you're up for it. Serve warm.
