graham crackers

I've long wanted to make graham crackers, and today was the day! I ended up following the simplest recipe. Miette beat out Martha Stewart and Smitten Kitchen in this regard. Besides being simple, this recipe also didn't have any leavening, and I liked that, too. These crackers (cookies?) were great, although I'd like something even more graham-y so I'll work on it. I think I need to score some whole grain flour. That said, I guarantee you can't eat just one of these. They are tasty.

Ingredients

  • 1/2 cup butter, room temperature
  • 1/3 cup firmly packed brown sugar
  • 3 tbsp honey
  • 1/2 tsp kosher salt
  • 1 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 tsp ground cinnamon
1 dozen 2x3" crackers

Directions

In the bowl of a standing mixer fitted with a paddle, combine butter, brown sugar, honey, and salt. (I'd lace the measuring spoon with a little vegetable oil to keep the honey from sticking.) Beat until fluffy, about 5 minutes.

In a separate bowl, sift together flours and cinnamon. Add to mixer and combine. Transfer to an air-tight container and refrigerate for at least 30 minutes.

Preheat oven to 350ยบ.

Working in batches, scoop out some dough, place between two sheets of wax paper, and roll out as thin as you like. Shape using a pizza or cookie cutter. Transfer to a parchment-lined baking sheet. (Refrigerate the dough if the crackers start to stick as you shape and transfer them.) Recombine scraps with the rest of the dough.

Bake for 8-14 minutes depending on the size of your cookies.
