guacamole

Guacamole is one of those dishes that says a lot about a person. It seems so revealing to show that I'm the kind of person that puts a lot of stuff in there. Except for garlic. I do not believe garlic belongs in guac. But onions, tomatoes, and cilantro? Yes! Please! While I admire people that exercise restraint with their guacamole, I like more.

Ingredients

  • 2 roma tomatoes
  • 1/2 cup cilantro
  • 2 slices medium red onion
  • 1/2 jalapeƱo or fresno pepper
  • 1 lime
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cumin
  • 2 avocados
2 cups

Directions

Slice tomatoes in half. Remove core and scoop out watery seedy bits. Dice. Set aside in a strainer or on a paper towel. Then add to a mixing bowl.

Chop up cilantro and add to the bowl. Mince the onion and add to the bowl. Remove seeds from the pepper, mince, and add to the bowl. Add the juice of the lime. Add salt and cumin. Toss.

Add the flesh of the avocados to the bowl, as well as the seed. Mix well, mashing the avocado.

Let sit for an hour before serving.
