This is a simple technique for making any raw kale salad. Start with thinly sliced leaves. Seriously, thin! Then dress it with a citrus-based dressing that will help break that roughage down. (I recommend my sesame miso vinaigrette - http://www.cookooree.com/u/joanie/recipes/sesame-miso-vinaigrette) Finally, let it sit for awhile. Citrus needs time to do its thing!
Ingredients
- 2 leaves dino kale, thinly sliced
- 1 tbsp citrus-based dressing
- salt and pepper to taste

Toss the kale and dressing. Let sit for 1 hour.
