Here's my simplified take on Nigella Lawson's fantastic chocolate loaf cake.

Ingredients

  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup butter
  • 4 oz bittersweet chocolate, chopped
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup boiling water

Directions

Preheat the oven to 375°.

In the bowl of standing mixer fitted with a whisk, beat the sugar, eggs, and vanilla.

Melt the butter and chocolate in a microwave at 30 second intervals, whisking in-between, until melted. Slowly incorporate it into the batter until just combined.

Sift together the flour and baking soda. Gently fold it into the batter. Then slowly add in the water, stirring as you go.

Pour the batter into a parchment-lined 9x5 loaf pan. Bake for 30 minutes. Lower the heat to 325º and bake for another 15 minutes.

Try your hardest to let cool completely before removing from the pan.

    This is amazingly moist considering there is no oil. Great recipe!
