Rice Pudding

This is my mom's rice pudding recipe. I grew up with it, this is serious comfort food for me. It's served with a Lemon Sauce.


  • 2 cup cooked rice
  • 1-1/2 cup milk
  • 1/8 tsp salt
  • 5 tbsp sugar
  • 1 tbsp soft salted butter
  • 1 tsp vanilla
  • 3 eggs
  • 1/2 tsp lemon zest
  • 1 tsp lemon juice
  • 1/3 cup raisins
6 servings


Combine milk, salt, sugar, butter, vanilla and eggs, beat well. Add lemon zest, lemon juice and raisins. Add rice, stir, and pour into a buttered baking dish. Bake at 325 degrees until set (about 50 minutes).
