I got this recipe from a woman named Marilyn about 25 years ago, and I've made it countless times. It was probably at least 15% of my diet through my late teens and early 20s. It's maybe more stew-like than chili-like. It's quick & cheap to make, and all the ingredients are shelf-stable but the onion & ground beef (and that can be stored in the freezer), so it's easy to just have the stuff kicking around & throw it together whenever. I like to eat it with great big dollops of sour cream.

Ingredients

  • 1 tbsp oil
  • 1 large yellow onion
  • 1 lb. ground beef (not too low fat)
  • 2 28 oz. cans whole tomatoes (fire roasted taste best)
  • 1 small can tomato sauce
  • 2-3 tablespoons chili powder
  • ~3/4 tbsp sugar
  • salt to taste
  • 2 28 oz. cans chili beans
  • 1 tsp cornstarch
8-10 servings

Directions

In a large, wide saucepan, heat oil. Dice onion & saute, set aside. Brown the ground beef, add back the onions. Add the canned tomatoes, pulling them apart as you add them. Include the liquid from the cans. Add all of the tomato sauce except for about 1 tbsp, leave that in the can and set aside. Add chili powder, sugar and salt to taste. Let simmer for about 20 minutes. Drain the beans and add. Add the cornstarch to the reserved tomato sauce, and add. Simmer for another 20 minutes. Best the next day.
