Cornflakes & Eggs

Cornflakes & Eggs by Humuhumu

My ultimate comfort food breakfast.

Ingredients

  • 1 cup cornflakes
  • 1 egg
  • 2 tbsp salted butter
1 serving

Directions

Break the cornflakes down into smaller bits. I use a potato masher for this, the old rolling pin & sack trick would work, too.

Melt butter in a small frying pan on medium or medium-high heat. Add egg to frying pan, breaking it up with your implement of choice as it fries. You're aiming for the whites to be fully cooked, the yolk a little less so, so leave the yolk alone at first.

Slop the buttery eggy mixture into the cornflakes, and toss them together until evenly mixed.

    This was one of my grandmothers favorite recipes to feed us when we spent the night at her house. She was born 1898. Passing it on to my grandkids!

    I do this. Only I soft boil my eggs and top it all off with salt and pepper. My family has been eating soft boiled eggs and corn flakes for 5 generations now. It's been a delightful/shameful family secret since forever. I seriously thought we were the only people in the world that did this.
